Named for the shrub growing wild behind the roastery
Ninebark peels in thin curling layers of bark — nine of them, the old timers say, though nobody's ever counted. We liked the idea that something plain-looking on the outside could hold that many layers underneath. It's what we're after in the cup too.
We started roasting in 2019 on a rebuilt 12-kilo cast-iron drum in a warehouse off Broadway, buying direct from three growers we visit ourselves — in Yirgacheffe, Huehuetenango, and Cauca. No blends of convenience, no beans we haven't tasted green.
